Mughlai Arbi (Yam)

Arbi(yam)                 500 gms.
Melon seed paste	  1/2 cup (or alternatively you can use
				   khas khas powder(poppy seeds) 1 tsp.
Curds beaten		  3/4 cup
Turmeric		  1 tsp.
Coriander powder	  1 tbsp.
Cumin powder		  2 tsp.
Chilli powder		  1 tsp.
Tomato puree		  3/4 cup
Ginger-garlic paste	  1 1/2 tbsp.
Garam masala powder	  1/2 tsp.
Grated onions		  1 cup
Oil			  3 tbsp and also to deep fry
Salt			  To taste

  1. Peel arbi and cut into 1 inch pieces. Deep fry in medium hot oil
    till golden brown.
  2. Heat 3 tbsp. of oil in a pan. Add grated onions and cook till
    golden brown. Add ginger-garlic paste and cook for a minute.
  3. Add turmeric, Coriander powder, cumin powder and chilli powder. Stir and
    add tomato puree and beaten curd(yogurt). Cook till oil leaves the sides.
  4. Add melon seed paste(or khuskhus paste) and cook for five minutes,
    stirring constantly.
  5. Add one cup of water and add fried yam. Bring it to a boil. Finally
    add garam masala powder and cook covered on low fire for 10 minutes.
