Mughlai Arbi (Yam)
Arbi(yam) 500 gms.
Melon seed paste 1/2 cup (or alternatively you can use
khas khas powder(poppy seeds) 1 tsp.
Curds beaten 3/4 cup
Turmeric 1 tsp.
Coriander powder 1 tbsp.
Cumin powder 2 tsp.
Chilli powder 1 tsp.
Tomato puree 3/4 cup
Ginger-garlic paste 1 1/2 tbsp.
Garam masala powder 1/2 tsp.
Grated onions 1 cup
Oil 3 tbsp and also to deep fry
Salt To taste
- Peel arbi and cut into 1 inch pieces. Deep fry in medium hot oil
till golden brown.
- Heat 3 tbsp. of oil in a pan. Add grated onions and cook till
golden brown. Add ginger-garlic paste and cook for a minute.
- Add turmeric, Coriander powder, cumin powder and chilli powder. Stir and
add tomato puree and beaten curd(yogurt). Cook till oil leaves the sides.
- Add melon seed paste(or khuskhus paste) and cook for five minutes,
stirring constantly.
- Add one cup of water and add fried yam. Bring it to a boil. Finally
add garam masala powder and cook covered on low fire for 10 minutes.
