Panchras Amti (Maharashtrian)
Redgram dal(tur) 1 cup
Raw bananas 4
Brinjal 1 small
Potato 1
Cashewnuts 10
Chopped fresh coconut few pieces
Fresh coconut grated 1 cup
Onion 1
Turmeric powder 1/2 tsp
Coriander seeds 2 tsp
Cumin seeds 1 tsp
Tamarind size of a small lime
Red chillies 2
Mustard 1 tsp
Green chillies 5-6
Goda masala 1 tsp
Oil for frying
Salt To taste
For goda masala:
Coriander seeds 250 gms
Cumin seeds 50 gms
Dry copra 50 gms
Black cumin seeds 15 gms
Pepper 15 gms
Black cardamom 15 gms
Cinnamon 15 gms
Fenugreek seeds 3/4 tsp
Blackgram dal(urad) 2 tbsp
Oil for frying
Method for goda masala: Fry each item separately in small oil and grind. Mix thoroughly
and store in airtight container.
- Peel bananas and potato and chop into cubes. Chop Brinjals into cubes.
- Boil the tur dal separately till it is soft.
- Boil all the vegetables separately till they are cooked.
- Heat 2 tbsp of oil in a fry pan. Add mustard seeds. When they crakle, add
sliced onions and fry for few minutes.
- Add cashewnuts, chopped coconut pieces and fry for a few minutes.
- Add cooked dal, vegetables and 1 cup of water and allow to simmer on a slow fire.
- Grind grated coconut, cumin seeds, red chillies and tamarind to a smooth
paste. Add ground masala to curry with salt to taste.
- Add green chillies and goda masala and allow to boil for a few minutes
before removing from fire.
- Serve with chapatis, chutney, curd, pickles and pappads.
