- Boil the potatoes, peel and mash them and keep aside.
- Slit brinjals horizontally and grill until half done.
- Scoop out the pulp carefully and keep the shells aside.
- Peel carrots and chop into small pieces.
- Chop onions and french beans.
- Grind coriander leaves, mint, ginger, garlic and salt to taste to a smooth paste.
- Heat oil in a fry pan and add chopped onions. Fry well till they are golden brown.
- Add ground paste and fry well till oil leaves the sides.
- Add carrots, beans, peas, potatoes and brinjal pulp and fry for 6-7 minutes.
- Add turmeric, coriander powder, cumin powder and garam masala with salt to taste and fry well.
- Squeeze juice of lime and remove from the fire.
- Place a little of the above filling in each brinjal shell and roast in a grill.
- Serve hot.
