Brinjal Masala


Small long-shaped brinjals	1/2 kg
Onions				2 nos
Tomatoes			4-5 nos
Garlic				3 cloves
Pepper				1/2 tsp
Cumin seeds			1/2 tsp
Fenugreek seeds (methi)		1/2 tsp
Curry leaves			8-10
Oil				3 tbsp
Vinegar(or tamarind juice)	1 1/2 tsp
Ghee/Margerine			To taste
Salt				To taste
			


  1. Cut brinjals into half from the middle.
  2. Fry the brinjal in oil.They are not to be fried for too long, so take them out and keep them aside.
  3. Take some ghee/oil in a pan and put the onions, garlic, cumin seeds, fenugreek, curry leaves, and fry for 2-3 minutes till the onions are brown. Add salt, pepper, chilli powder and turmeric.
  4. Fry for 2-3 minutes and put in brinjals and tomatoes.
  5. Add in small water to make gravy. Let it simmer for 10-15 minutes.
  6. Add vinegar/tamarind juice to it and deep it for a while before serving.
