Cabbage Chutney (Pachadi)


Grated Cabbage			1 1/2 cup
Coriander seeds			1 tbsp
Tamarind paste			1 tbsp
Green chillies			3-4 nos
Cumin seeds			1 tsp
Coriander leaves		2 tbsp
Curry leaves			Few
Asafoetida powder		1/2 tsp
Oil				2 tbsp
Salt				To taste

 

  1. Heat oil in a fry pan on low heat. Add green chillies and coriander seeds. Fry for 2 minutes and remove from the skillet.
  2. In the remaining oil add grated cabbage and salt and cover. The cabbage should become soft in 5-6 minutes. Remove the cabbage from the pan and let it cool.
  3. In a processor add cabbage, green chilli, coriander seeds, tamarind paste, cumin seeds, coriander leaves, curry leaves, asafoetida and salt and grind for 2-3 minutes. Do not grind for too long as it tastes better when itis slightly chewy.
  4. Goes well with hot plain rice with a topping of ghee.
