Dal with Vegetables(Gujarati)


Yellow split peas (chana dal)	2 cups
Water				4-6 cups
Turmeric			1 tsp
Coriander powder		2 tsp
Selected vegetables 		2 cups
(cauliflower, carrots, 
zucchini, potatoes & 
eggplant, cut into small 
cubes)
Tomatoes chopped		3-4
Ghee/margarine			3 tsp
Green chillies chopped		2 tsp
Asafoetida powder		1 tsp
Red chilli powder		1/2 tsp
Cinnamon powder			1/2 tsp
Nutmeg powder			1/4 tsp
Cumin powder			3 tsp
Paprika powder			2 tsp
Ginger grated/powder		1 tsp
Lemon juice			3 tsp
Chopped fresh coriander leaves	1/4 cup
Salt				To taste

 

  1. Soak the split peas with 10-12 cups of water for atleast six hours or overnight.
  2. Pressure cook the split peas with turmeric and coriander powder till they are tender.
  3. Remember to keep the dal as thick as possible.
  4. Cook your vegetables - either grill, bake or deep-fry until tender.
  5. Add the dal and cooked vegetables.
  6. Cut the tomatoes into small pieces and add to the dal and stir.
  7. Heat ghee/margarine/oil in a heavy bottomed fry pan. When hot, add green chillies and saute them for 1 minute. Add asafoetida. Remove from the heat and allow it to cool down until just very warm. Sprinkle all the remaining powdered spices into the warm oil and stir to mix.
  8. Add the spices and oil to the simmering dal and mix well to combine.
  9. Add salt, lemon juice and fresh coriander leaves. Simmer for another 2-3 minutes and serve hot with chapati or rice.
