Fried Rice


Cooked basmati rice		2 cups
Mixed boiled vegetables         2 cups
(carrot, broccoli, peas,
mushrooms)
Spring onions			1/2 bunch
Oil				2 tbsp
Soya sauce			1 tbsp
Ajinomoto			1/4 tsp
Vinegar				2 tbsp
Chilli paste/green chillies	1 tsp
Sesame oil			2 tsp
Ginger				1 1/2" piece
Garlic				4-5 cloves
Salt				To taste

  1. Cut 3 garlic cloves into big pieces and the rest should be grated. Cut half of the ginger into big pieces abd the rest should be grated.
  2. Cut the end portions of the spring onions into half inch pieces and keep aside. Cut the rest of the onions into half inch pieces and keep them separately.
  3. Heat oil in a pan and add big pieces of garlic and ginger and fry fry till they are dark brown in color. Remove the ginger and garlic pieces from the oil.
  4. In the same oil add grated ginger and garlic. Fry for 1 minute. Add end portions of spring onion pieces and fry for 2 minutes. reduce the flame.
  5. Add the cooked rice and fry for 2-3 minutes. Add soya sauce, ajinomoto, vinegar, green chillies/chilli paste, sesame oil and stir well.
  6. Add boiled vegetables and salt. Fry for 4-5 minutes.
  7. Add the remaining spring onion pieces and stir well for 2 minutes.
  8. Serve hot.
