Stuffed Karelas (Gujarati)


Bitter gourd			8 medium sized
Potatoes			3
Tomato				1
Onions				2 medium sized
Turmeric powder			1/2 tsp
Green chillies			2
Garam masala powder		1 tsp
Chilli powder			1 tsp
Lime				1
Oil 				For frying
Salt				To taste


  1. Boil the potatoes, remove the skin and mash. Keep it aside.
  2. Scrape off the scaly skin of the bitter gourds and keep them immersed in salt water for about half an hour.
  3. Drain off the water, slit them lengthwise on one side, apply a little salt on the inside and keep aside for a few minutes.
  4. Chop onions, tomato and green chillies.
  5. Heat oil in a fry pan. Add chopped onions, green chillies and fry for a while.
  6. Add turmeric powder, chilli powder, garam masala powder and salt to taste.
  7. Add chopped tomatoes, mashed potatoes and fry well. Squeeze the juice of a lime before removing from the fire.
  8. Stuff the karelas with the above filling and gently tie with a string.
  9. Heat 3 tbsp oil in a fry pan and gently put in the stuffed karelas. Fry well on all sides until well done. Serve hot with chapati.
