Stuffed Karelas (Gujarati)
Bitter gourd 8 medium sized
Potatoes 3
Tomato 1
Onions 2 medium sized
Turmeric powder 1/2 tsp
Green chillies 2
Garam masala powder 1 tsp
Chilli powder 1 tsp
Lime 1
Oil For frying
Salt To taste
- Boil the potatoes, remove the skin and mash. Keep it aside.
- Scrape off the scaly skin of the bitter gourds and keep them immersed
in salt water for about half an hour.
- Drain off the water, slit them lengthwise on one side, apply a little
salt on the inside and keep aside for a few minutes.
- Chop onions, tomato and green chillies.
- Heat oil in a fry pan. Add chopped onions, green chillies and fry for
a while.
- Add turmeric powder, chilli powder, garam masala powder and salt to taste.
- Add chopped tomatoes, mashed potatoes and fry well. Squeeze the juice of
a lime before removing from the fire.
- Stuff the karelas with the above filling and gently tie with a string.
- Heat 3 tbsp oil in a fry pan and gently put in the stuffed karelas. Fry well on all sides until
well done. Serve hot with chapati.
