Masala Bhath (Maharashtrian)


Rice				2 cups
Brinjals			100 gms
Oil				1/4 cup
Cumin seeds			1/2 tsp
Turmeric powder			1/4 tsp
Coriander seeds			1 tsp
Grated coconut			1/2 cup
Red chillies			2
Cashewnuts			5
Yogurt/curd			1/2 cup
Cloves				2
Cinnamon			1" piece
Mustard seeds			1/2 tsp
Bay leaf			2
Curry leaves			few
Coriander leaves		few sprigs
Salt 				To taste

  1. Cut the brinjal into small cubes and keep aside.
  2. Roast coriander seeds, cumin seeds and red chillies. Grind to a powder and keep aside.
  3. Heat oil in a fry pan and add mustard seeds. When they splutter, add cinnamon, cloves, bay leaves and fry well. Add rice and fry for few minutes.
  4. Add brinjals and fry for a few minutes.
  5. Add 2 1/2 cups of water, powdered ingredients and salt and mix well.
  6. Cook till the rice is almost cooked.
  7. Remove the rice and pour into a heavy bottomed vessel. Allow to simmer on a low fire for a few minutes.
  8. Garnish with grated coconut and chopped coriander leaves.
