Masala Bhath (Maharashtrian)
Rice 2 cups
Brinjals 100 gms
Oil 1/4 cup
Cumin seeds 1/2 tsp
Turmeric powder 1/4 tsp
Coriander seeds 1 tsp
Grated coconut 1/2 cup
Red chillies 2
Cashewnuts 5
Yogurt/curd 1/2 cup
Cloves 2
Cinnamon 1" piece
Mustard seeds 1/2 tsp
Bay leaf 2
Curry leaves few
Coriander leaves few sprigs
Salt To taste
- Cut the brinjal into small cubes and keep aside.
- Roast coriander seeds, cumin seeds and red chillies. Grind to a powder and keep aside.
- Heat oil in a fry pan and add mustard seeds. When they splutter, add cinnamon,
cloves, bay leaves and fry well. Add rice and fry for few minutes.
- Add brinjals and fry for a few minutes.
- Add 2 1/2 cups of water, powdered ingredients and salt and
mix well.
- Cook till the rice is almost cooked.
- Remove the rice and pour into a heavy bottomed vessel. Allow to simmer on
a low fire for a few minutes.
- Garnish with grated coconut and chopped coriander leaves.
