Black Pepper Rice


Rice				1 cup
Roasted black pepper		1 tsp
Roasted black gram		1 tsp
Roasted coriander seeds		1/2 tsp
Roasted cumin seeds		1/2 tsp
Roasted fenugreek seeds		1/4 tsp
Roasted dry red chillies	2
Turmeric powder			1/4 tsp
Mustard seeds			1/2 tsp
Asafoetida			1/2 tsp
Curry leaves			Few
Tamarind(lemon-sized, soaked
in water)
Oil				1 tspb
Peanuts/cashew nuts(fried)	Optional
Salt				1 tsp
    
   


To prepare the rice:

  1. Cook the rice separately. Do not over-cook. The grains should stay separate.
  2. Grind all the roasted ingredients to fine powder.
  3. Heat oil in a pan and add mustard seeds. When they crackle, add asafoetida and pinched curry leaves.
  4. Squeeze the juice of tamarind and pour it in the seasoning. Add salt and let the tamarind juice boil for a while.
  5. Now add the powdered ingredients, stir well and cook till the consistency becomes thick and oil starts leaving on the sides of the pan.
  6. Add the cooked rice and mix it thoroughly.
  7. Serve hot with pappadams.
  8. Serves for two persons
