Shahi Paneer


Paneer (cottage cheese)		250 gms (cut into cubes)
Onion chopped	 		1 no
Ginger grated			1 tbsp
Green chillies chopped		2 nos
Tomatoes chopped		5 nos
Brown cardamon seeds crushed	2
Chilli powder			1 tsp
Pepper powder			1/2 tsp
Garam masala			1/2 tsp
Coriander powder		1 tsp
Milk or thin cream		1/3 cup
Salt                            To taste

  1. Heat 2 tbsp ghee or oil Add onion, ginger, green chilli and cardamon.
  2. Cook until onions are light brown.
  3. Add tomatoes. Cover and cook for 7-8 minutes till the tomatoes turn pulpy.
  4. Remove from fire. Cool.
  5. Grind to a puree with 1/2 cup water in a mixer.(If you want to strain the puree, you can strain it or you can use it as it is).
  6. Heat 2 tbsp of oil/ghee in a pan. Add the tomato puree.
  7. Cook for 4-5 minutes on low heat.
  8. Add salt, chilli powder, pepper powder, garam masala and coriander powder.
  9. Cook till the gravy is quite thick. Keep aside.
  10. At the time of serving, heat gravy and add the paneer pieces.
  11. Add enough cream or milk to get the right thickness of the gravy.
  12. Serve garnished with a bunch of coriander leaves surrounded by finely grated paneer.
