Shahi Paneer
Paneer (cottage cheese) 250 gms (cut into cubes)
Onion chopped 1 no
Ginger grated 1 tbsp
Green chillies chopped 2 nos
Tomatoes chopped 5 nos
Brown cardamon seeds crushed 2
Chilli powder 1 tsp
Pepper powder 1/2 tsp
Garam masala 1/2 tsp
Coriander powder 1 tsp
Milk or thin cream 1/3 cup
Salt To taste
- Heat 2 tbsp ghee or oil Add onion, ginger, green chilli and cardamon.
- Cook until onions are light brown.
- Add tomatoes. Cover and cook for 7-8 minutes till the tomatoes turn pulpy.
- Remove from fire. Cool.
- Grind to a puree with 1/2 cup water in a mixer.(If you want to strain
the puree, you can strain it or you can use it as it is).
- Heat 2 tbsp of oil/ghee in a pan. Add the tomato puree.
- Cook for 4-5 minutes on low heat.
- Add salt, chilli powder, pepper powder, garam masala and coriander powder.
- Cook till the gravy is quite thick. Keep aside.
- At the time of serving, heat gravy and add the paneer pieces.
- Add enough cream or milk to get the right thickness of the gravy.
- Serve garnished with a bunch of coriander leaves surrounded by finely
grated paneer.
